For an interesting makeover of "traditional Mexican tacos", these nutritious and delicious Moroccan Chicken Tacos keep the whole family happy. As a variation for everyone, they make a great lunch or light dinner, when you leave out the tortilla and serve it with a lovely fresh green salad.
1mediumcucumber - chopped(leave the skin on to maximize nutrients)
3tbsptomatoes - chopped
1/2red onion - finely chopped
2tbspparsley - chopped
2tbspolive oil
1lemon - juice only
Spices for chicken rub
1 1/2tspcinnamon
2tspsmoked paprika
1tspfresh ginger
1tspturmeric
1/2tspground nutmeg
1tspground cumin
1tbspolive oil
For the tacos
14ozchicken breast(approx 400g)
8smallwhole wheat tortillas
1handfulparsley - chopped
spicy sauce - optional
Instructions
To make salsa
In a bowl, mix all the ingredients for the salsa and season to taste with salt and pepper. Allow the mixture to rest in the fridge while you prepare the chicken.
To make chicken tacos
Preheat the oven to 420°F (215°C).
Combine all the spices for the chicken rub with 1 tablespoon of olive oil, and rub on the chicken breasts.
Heat a non-stick frying pan on medium heat, and sear the chicken breasts for 3 minutes on each side. Then place the chicken on a baking tray, and bake it in the oven for 8-10 minutes or until cooked through.
Heat up the tortillas in a hot oven or on a pan. Chop the cooked chicken, and assemble the tacos.
Before serving, garnish the tacos with chopped parsley and hot sauce (if using).
Notes
Special Tip #1 - make a large batch of the chicken rub, and you can use it to spice up other recipes. Special Tip #2 - try using the rub on roast vegetables, such as carrots, pumpkin, sweet potato, parsnip - it brings out an amazing flavor and makes a magnificent vege rich meal on its own!
