Adrenal Fatigue Recipes – Slow Cooker Chicken Fajitas
Too often, making healthy nutritious meals that the whole family enjoys is hard & time consuming.
Which means it’s the last thing we want to do at the end of a busy day.
But, these Slow Cooker Chicken Fajitas tick all the boxes.
They’re easy, taste fantastic, popular with the family and they’re high-protein, low-fat and low-carb.
The chicken mix slowly cooks and develops during the day, so when everyone is hungry, you can serve as fajitas, or alternatively just add fresh steamed vegetables of salad for another healthy option.
As with many of the other recipes – make a big batch – it keeps well in the fridge and the flavor develops further and it will give you a few different meals, plus healthy leftovers for lunch.
Slow Cooker Chicken Fajitas
Ingredients
- 2 lbs chicken breasts (approx 900g)
- 4 bell peppers (capsicum) - sliced
- 1 red onion - sliced
- 2 tbsp honey
- 1 tbsp olive oil
- 1 lime (juiced)
- 1 tbsp chilli powder (adjust to suit your preference)
- 1 tbsp cumin
- 1 tbsp paprika
- 1 tsp salt
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 cup chopped tomatoes
Instructions
- Place half of the sliced peppers (capsicum) and onion in the slow cooker. Layer the chicken and coat with honey, olive oil, lime juice, all the seasoning/spices and chopped tomatoes.
- Lastly, add the remaining peppers and onions and cook for 4 hours on high (or 7-8 hours on low).
- Remove the chicken and shred it with a fork, then return it to the slow-cooked. Mix well and cook for another 10 min on low.
- Assemble fajitas and enjoy.
- Suggested serving (not included in nutrition info) :• tortillas, cream, guacamole, coriander
