Adrenal Fatigue Recipes – Parsley Crepes with Smoked Salmon
For the years I suffered with my health and AF symptoms, I always thought I was eating “healthy”.
My regular breakfast, every day – fruit, fruit yogurt and granola.
Then when I realized the incredible amount of “hidden” sugar, I was stunned – no wonder I suffered – the sugar spike was destroying my whole day.
So now a high-protein, low-carb (low-sugar) breakfast, sets me up perfectly – for a day of sustained energy, and balanced blood-sugar.
So, this Parsley Crepes with Smoked Salmon is perfect – nutritious and so tasty.
Is quick to make and equal to (or better than) anything I’ve had at our local cafe.
So much flavor, and full of protein and slow release carbs – enjoy!
Parsley Crepes with Smoked Salmon
Ingredients
- 2 tbsp. spelt flour
- 1 tbsp. flax seeds
- 1/2 cup sparkling water (approx 100ml) - the sparkling water makes the crepes light and fluffy
- 1 large handful parsley (if no parsley, use fresh spinach, spinach leaves or similar)
- 1 tsp. olive oil
- 2 oz. smoked salmon, sliced (approx 60g)
- 4 tbsp. cottage cheese
- 2 tsp. chopped fresh dill
- 2 wedges lemon
Instructions
- In a high-speed blender or food processor, blend the flour, flax seeds, water, parsley, olive oil, and salt until smooth, and slightly runny.
- Heat a dry non-stick pan on medium heat and using the earlier prepared mixture, make two thin crepes.
- Make sure the crepe has set enough before you try flipping it, then flip over. Cook the crepe for another 2-3 minutes.
- In a bowl, mix the cottage cheese with the dill and freshly ground black pepper.
- Spread the cheese mixture over the crepe,then top with smoked salmon slices. Serve with a lemon wedge.
Notes
- the texture of the batter needs to be of a drinking yogurt, so add more water as required
- use buckwheat flour for gluten-free option
