Adrenal Fatigue Recipes – Mediterranean Chicken Salad
For a quick, light lunch or even dinner, this Mediterranean Chicken Salad, is high protein, low-carb, fresh flavor packed with every mouthful.
Spring and summer salads don’t have to be dull and bland.
Ready in 10 minutes, with chicken you’ve cooked earlier, this hearty, nutrient rich salad will leave you full of energy for hours.
My Dad Tip
To make meal preparation easier, as part of each week’s food shopping, when I’m at the grocery store, I always pick-up a rotisserie chicken, pull it apart and keep it ready in the fridge.
That way, I can easily throw a tasty and nutritious lunch or dinner together quickly.
Perfect for when I’m short of time or motivation!!
Mediterranean Chicken Salad
Ingredients
For the dressing:
- 2 tbsp lemon juice
- 2 tbsp olive oil extra virgin
- 1/4 tsp herbs de Provence
- 1 tsp minced garlic
- 1 tbsp apple cider vinegar
For the salad:
- 2 1/2 cups chicken breast - cooked and chopped (approx 300g)
- 1/4 cup feta cheese - crumbled (approx 30g)
- 2 cups iceberg lettuce - chopped (you can use any lettuce or even spinach leaves)
- 1 handful parsley - chopped
- 1 handful basil - chopped
- 1 small red onion - finely chopped
- 1/4 cucumber - chopped
- 6 cherry tomatoes - halved
- 10 black olives - sliced
Instructions
- First prepare the dressing by mixing all the dressing ingredients together in a cup. Season to taste with salt and pepper.
- Next, prepare and chop all the salad ingredients and place in a bowl. Pour over the dressing and mix well.
- Divide between two bowls and serve.
