Adrenal Fatigue Recipes – Italian Style Chicken
We often stay away from our favorite Italian meals, when we’re trying to reduce our carb intake and better manage our blood-sugar levels.
Not with this high-protein, low-carb flavor packed Italian classic.
Make a big batch and have for leftover lunch, as the flavors develop and improve in the fridge.
Italian Style Chicken
Ingredients
- 14 oz chicken breasts (approx 400g)
- 1 tbsp. coconut oil
- 1 red onion - sliced
- 1 cup eggplant /aubergine - cut into cubes
- 1 can chopped tin tomatoes (approx 14.5oz. or 400g)
- 1 cup sun-dried tomatoes - drained & chopped
- 1/4 cup olives - sliced (approx 50g)
- 2 handfuls fresh basil leaves - chopped
- 1 tbsp your favorite Italian style herbs (fresh or dried), such as oregano, thyme, rosemary, garlic)
- salt and paper to season
Instructions
- Cut the chicken breasts into bite size chunks. Heat the coconut oil in a pan and fry the chicken in batches until browned and cooked throughout.
- Add in the onion and eggplant and cook for another 2-3 minutes until onion is soft. Then add the chopped tomatoes and reduce the heat. Cover and simmer for 10 minutes.
- Once eggplant is soft, add the sun-dried tomatoes, olives, fresh basil and dried (or fresh) herbs. Season with salt and pepper.
- Serve garnished with fresh basil and brown rice or zoodles/steamed vegetables.
