Adrenal Fatigue Recipes – Beef & Black Bean Tacos
I serve up this flavor rich taco dish in a few ways, which makes it a real family favorite – nutritious, full of protein, healthy avocado fats, vegetables plus legumes – the complete balanced meal.
My kids have always loved tacos, so I let them assemble their own, while I typically replace the taco shell with a lettuce leaf for lower carbs when I make mine – a “healthy taco” they call it.
I also create a ground beef version, but I’ve always loved the extra flavor of meat done on the barbecue.
Which makes this the perfect dish when we’re having friends around – I grill a batch of lean steaks, slice them up and everyone digs in to assemble their own.
Beef & Black Bean Tacos
Ingredients
- 3 tsp. Mexican seasoning (you can use pre-packaged mix, or make your own in batches and use in other recipes)
- 2 tbsp. olive oil
- 14 oz. lean beef steak (approx 400g - if you're cooking for lots of people., allow approx 100g beef per person)
- 2 red pointed peppers (capsicum) (cut into rings)
- 2 cups canned black beans (approx 400g can - rinsed and drained)
- 12 taco shells (if you want lower carbs for yourself, you can use a lettuce leaf instead of taco shell)
- 1 avocado
- 1 1/2 cup iceberg lettuce, chopped (approx 100g - extra if you're using the lettuce leaf as a taco shell)
- 1/2 cup natural Greek yoghurt (must be natural, and unsweetened)
- 1 lime
Instructions
- Preheat the oven to 360°F (180°C).
- Mix 2 tsp. of the spices with 1 tbsp. of oil and rub the steaks with it.
- Heat a dry frying pan and fry the steaks for about 4 minutes (or adjust time to cook to your liking), turning halfway. Place the steaks on a plate, cover with foil and leave to rest for 10 minutes.
- In the meantime, heat the remaining oil in a frying pan and cook the peppers with the rest of the spices for 5 minutes on medium heat. Add the beans and heat for another 1 minute. Season with salt and pepper to taste.
- Heat the taco shells in the oven according to the instructions on the package.
- Meanwhile cut the avocado in half, remove the stone and scoop out the flesh with a spoon, then cut it into strips. If you prefer, use the avocado to make your favorite guacamole.
- Cut the cooked steaks into thin strips. Fill the tacos with the lettuce, steak strips, peppers, avocado and top with Greek yogurt and a squeeze of lime.
